Fibre on the go

Did you know that most adults require 25-35 grams of fibre each day to maintain gut health, bowel regularity and overall optimal health status? Try these tasty muffins to up your fibre intake.

High Fibre Muffins (recipe makes 12 muffins)

Ingredients 1/3 cup (85 grams)  wheat bran 1 cup (250 mL)  buttermilk 5 tbsp (75 mL)    vegetable oil 1     egg 1/3 cup + 1 tbsp (100g) dark brown sugar 1/2 teaspoon (2.5 mL)  vanilla extract ½ cup (125 grams)   flour 1 teaspoon (5 mL)  baking soda 1 teaspoon (5 mL)   baking powder 1/2 teaspoon (2.5 mL)  salt 1/3 cup (85 grams)   sultana raisins  


  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mix together the buttermilk with the wheat bran. Let the buttermilk-bran mixture stand for about 10 minutes.
  3. Beat together the following ingredients then add them to the buttermilk mixture: oil, egg, sugar, vanilla.
  4. Sift together the following ingredients then stir the flour mixture into the buttermilk mixture and blend the ingredients together: flour, baking soda, baking powder, salt. Fold in the raisins. Fill muffin liners about 2/3 full with batter.
  5. Bake the mixture for 15-20 minutes. Cool and enjoy!
