Sunshine, fresh air and the sight of fresh greens poking through the soil are a few of our favourite spring things. It warms the soul to smell fresh herbs and greens as they welcome us to a season of good eating. Try some of these tasty recipes now on our kitchen menus.

This is a great twist on salad. The recipe features asparagus, hard-cooked eggs, lemon and parsley. It’s a breakfast, brunch and dinner favorite.

Rhubarb Smoothie

Who doesn’t love a smoothie? One of our dietitians loves to play in the kitchen and her daughter loves pushing buttons on the blender.  So, she thought, why not a stewed rhubarb smoothie? We’re glad she was curious enough to try.

Combine in a blender: ½ cup stewed rhubarb, ½ cup fruit of choice (banana or strawberry are delicious), ½ to 1 cup milk (depending on your ‘thickness’ preference), pinch of cinnamon, honey to taste (optional). Blend until well combined and enjoy.

To make stewed rhubarb, combine 1 ½ cups fresh or frozen rhubarb with 1-2 tbsp water and 1-2 tbsp of honey. Try adding diced fresh or frozen strawberries or peeled and diced apple to the mix. Added fruit helps to lessen the bitterness of rhubarb.
