Cucumber Watermelon Salad

It’s summer time, which can only mean one thing:  fresh, seasonal fruits and vegetables.  What better way to cool off this summer than bringing a fresh salad to your family cookout?

Check out these three delicious recipes that are sure to please everyone.

Cucumber Watermelon Salad

Ingredients

  • 1 cup (250mL) watermelon, diced
  • ½ cup (125mL) English cucumbers, peeled and diced
  • 2 Tbsp. (30mL) finely chopped red chilli
  • 6 basil leaves, finely sliced
  • 6 mint leaves, finely sliced

Dressing

  • 4 Tbsp. (60mL) lime juice
  • 1 tsp. (5mL) liquid honey
  • ¼ tsp. (1mL) salt

Instructions

  1. In a small bowl, combine the lime juice, liquid honey, and salt and whisk together.
  2. In a large salad bowl, combine ingredients and salad dressing.
  3. Enjoy!

Note: Add a skewer of BBQ shrimp with your salad to make this a balanced meal.

Strawberry Poppyseed Salad

Ingredients

  • 1 head of Romaine lettuce, torn into bite size pieces
  • 1 quart of fresh Strawberries, sliced
  • 3 green onions, sliced
  • ½ English cucumber, sliced and cut into quarters

Dressing

  • ½ cup (125mL) low fat mayonnaise
  • 2 Tbsp. (30mL) vinegar
  • ¼ cup (60mL) milk (skim, 1%, 2%, or whole)
  • 2 Tbsp. (30mL) poppyseeds

Instructions

  1. In a small mason jar, combine all dressing ingredients. Cover jar and shake well until ingredients are well blended.
  2. In a large salad bowl, combine ingredients. Add ¼ cup (60mL) of salad dressing to salad (or more if desired).
  3. Enjoy!

Note: Dressing can keep for up to several days in the refrigerator.

Mandarin Orange Salad

Ingredients

  • 1 head of Romaine lettuce
  • ½ cup (125mL) almonds, sliced and slightly toasted
  • ½ cup (125mL) sunflower seeds
  • 2 green onions, chopped finely
  • 10 oz. can of Mandarin oranges, drained

Dressing

  • ½ cup (125mL) vegetable oil
  • 3 Tbsp. (45mL) red wine vinegar
  • 1 Tbsp. (15mL) lemon juice
  • 2 tsp. (10mL) sugar
  • ½ tsp. (2mL) dry mustard
  • 1 clove of garlic, crushed

Instructions

  1. In a large salad bowl, combine all ingredients except Mandarin oranges.
  2. In a small bowl, whisk together salad dressing ingredients.
  3. Toss salad and dressing together. Before serving add Mandarin oranges.
  4. Enjoy!
