Who doesn’t love the smell of summer? And, we’re not just talking fresh air and flowers.

It is a season of fresh foods. A season to inspire the taste buds. Whether you shop at the grocery store, farmer’s market or in your own backyard garden, this is the time of year to enjoy the full taste of delicious vegetables and juicy fruits.

Check out some of our favorite ways to enjoy healthy alternatives using fresh foods this summer.

Recipe 1 – Mint, Spinach & Banana Smoothie

Ingredients: 1 frozen banana, ½ - 1 cup spinach, 10-15 mint leaves, 1 cup milk, honey to taste (optional)

Directions: Place ingredients in a blender. Blend until smooth. Delicious and refreshing! A great way to enjoy seasonal greens and herbs.  Try with kale or lettuce for a twist.

Recipe 2 - Beet Green Chips*

Move over potatoes … the greens are the new crispy chip in town. This recipe is the perfect accompaniment to a backyard barbeque or traditional ‘bagged chip.’ And bonus – it helps you use the whole vegetable (not just those tasty beet roots).  Try with kale as well. 

Recipe 3 -  Arugula, Avocado & Radish Salad with Egg*

Toast and bacon move over! Freshen up your breakfast, lunch or dinner with this quick and simple recipe. Substitute spinach or baby lettuce for arugula.
